Breakfast has never been this much fun!

This recipe should really be called 'easy does it'. You can prepare this a night in advance and your kids will jump out of their beds in the morning with a spring in their step. Add some banana, or peanut butter (of course) or apple-pear paste and everybody will be ready to GO!

Banana bread
180-200 gram oats
1-2 teaspoons of cinnamon (or cardamom)
1 teaspoon pure vanilla powder
6 teaspoons baking powder (organic)
1 handful of raisins
3 ripe bananas
2-3 eggs
splash of milk or coconut milk
1 teaspoon of coconut oil or butter
if required, a handful of walnuts and 1 large zucchini (grated)
and/or 2-3 tablespoons (coconut) milk
Preheat the oven to 180 degrees Celsius. Mix all dry ingredients
in a bowl, add walnuts if desired. Mash the bananas in another
bowl (or use a bar mixer) and add the eggs,
milk, and the zucchini if required. Now add the wet
mixture to the dry mixture and combine everything thoroughly until it is the right
substance. Let the mixture rest for a moment. Pour the 'dough' in a
cake mould and bake in the oven for 40-45 minutes. The banana bread is ready when
it sounds somewhat hollow when you tap it with a spoon. Leave to
cool for a little bit before cutting.
